Nothing beats a summer BBQ and these sugared pork shoulder steaks will soon be your favourite! A top tip to keep your steaks juicy and flavoursome is to not overcook them but instead cover them with foil for approx 5 minutes before serving.
4 pork shoulder steaks 110g muscovado sugar 2tbsp cider vinegar 1 clove fresh garlic (peeled and crushed) 1tsp dry English mustard 1tsp Chinese five spice
Mix all the ingredients together and rub into the steaks. Leave for 1-2 hours.
Cook over a barbecue, griddle, or under a grill on a moderate heat, turning regularly. The sugar will caramelise but be careful not to let it burn. The steaks should be cooked through but still juicy.
