Basic Casserole

There are many variations, twists and takes on the classic casserole recipe so here is a range of our favourites you can try! This recipe serves four people.

1 Onion (sliced)
3tbsp Olive Oil
1–2 tbsp Flour
Stock (or water and stock cube)
675g meat (cut into 2cm cubes)
Half a bottle of wine (red wine for red meat, white wine or a bottle of cider for white meat)


  1. Preheat the oven to 200°C.
  2. Put the goose fat into a roasting tin and place in the oven to melt and heat up.
  3. Cut the carrots into equal sizes and place in the hot roasting tin, spooning fat onto the tops to ensure they’re evenly covered. Salt and pepper to taste.
  4. Place in the oven for 25-30 minutes, depending on size, until the carrots are lightly browned, turning occasionally.
